'Bean to Bar' stands for an ethical and qualitative approach to the entire production process between producer and consumer.


'Bean to Bar' stands for an ethical and qualitative approach of the whole production process between producer and consumer. I myself am deeply committed to a 'fair trade' relationship across the various necessary intermediate steps of the process from cultivation to the making of chocolate. My rebellious nature lies partly at the root of this fairness principle of action and production. My innate sense of justice, which I inherited from home, ensures that I will never import cocoa beans from countries that are under discussion for not respecting human rights and sound work ethics.

Each supplier, producer and cooperative I have carefully selected myself based on this ethical standard. On the one hand, the chocolate I produce today is organic, sustainable and respectfully grown.

On the other hand, the advantage of a 'Bean to Bar' principle is thorough quality control. By having a say in every step of the process, I am able to obtain only the best of cocoa. Through my expeditions and years of relationship with various cooperatives, local producers and importers, I have been able to make my own adjustments to the growth and fermentation process of my intended beans.

A cacao fruit requires special care and treatment if we are to achieve a sustainable and high quality product together. This unique position means that the chocolate I produce in my studio today is of exceptionally pure and high quality.

And once that standard is set, it's a real pleasure to be able to make the best chocolate in the world right here in Belgium. Fortunately, I don't do this alone. Every day, I can rely on a loyal team of experts in the field. Together with them, making chocolate is more than a sweet activity. It is a continuous growth and striving for perfection!
